  Here’s a set of three delicious vegan burrito recipes — each using a different ready-made vegan wrap — and each offering different options for spiciness (mild, medium, or hot, depending on your taste).   🌯 1. Recipe for Mock Turkey Noodle Soup (Vegan)

Mock Turkey Soup Here is another one of the Cooking School demo soups.  If you are feeling the lack of a turkey soup the day-after the festive occasion, this is fast and easy to throw together!  And tasty, of course.  And healthier than the real bird (see this video by Dr. Michael Greger about eating poultry) IN SOUP POT: 3 Qts. Water 1 C. slivered or chopped Celery 1/2 to 1 C. chopped Carrots 1/2 C. Onion Flakes 2 cubes Organic Herbal Bouillon or 4 T. Homemade Broth/Bouillion Other veggies , as desired, such as sliced mushroom, green peas, green beans, etc. BRING TO BOIL TURN DOWN HEAT TO SIMMER for 5 Minutes ADD: 2 C. diced Firm Organic Tofu 2 T.  Chicken-style Seasoning  (No MSG) Other seasoning and salt/pepper to your taste Approximately 4 C. cooked Pasta

Pecan Nut Roast (Vegan, No Added Oils, Gluten-Free)

This pecan nut roast is one of the most popularly viewed recipes on this site.  And it should be cooked up anytime you want a simple, delicious, high nutrient-dense dish for your family or to take to a potluck. Watch this short video  where Dr. Michael Greger of NutritionFacts.org explains what scientific studies show to be the health benefits of the pecan in staving off cancer!  Measure and assemble the following ingredients: 4 C. Water 1 C. Pecan Halves (or pieces) 1 1/2 tsp. Salt 1 T. Chicken-style Seasoning (Optional) 1 T. Nutritional Yeast 1 T. Turmeric powder (Optional) 1 C. Chopped Onions 3 C. Rolled Oats Blend together: Water, Pecans, Salt, Chicken-Like Seasoning, Nutritional Yeast, Turmeric (no pecans?  Substitute walnut pieces). Vegan Potato Casserole - real comfort food  *Approximately 6 Cups peeled, cooked potatoes *Cool and DICE the potatoes with 2 Cups of Cashew Sour Cream (recipe follows): CASHEW SOUR CREAM: *1 C. Water *1 C. raw Cashews *1 T. Lemon juice *1/2 tsp. Celtic Sea Salt *1 T. In a Blender, Whiz together the following: • 2 C. Water, 2 C. Raw Cashews • ½ C. Sunflower or Grapeseed Oil (or 1/4 C. melted Coconut Oil) • 1 T. Chicken-Style Seasoning (No MSG) • 1 T. Cauliflower-Cashew Casserole

Luscious Cauliflower-Cashew Casserole • Parboil OR Steam 1 Minute 6 C. Cauliflower florets (or broccoli florets) • Add 2 coarsely grated Carrots • Add 2 stalks Celery, finely chopped (or mushrooms, as in the photo) In Blender, whiz the following until smooth: 2 C. Water,  1 Onion,  ½ C. Sunflower Seed Oil 2 T. Chicken Style Seasoning (no MSG) 1 T. Mrs. Dash Original 2 T. Corn Starch 2 C. IN MIXING BOWL: *1 C. Boiling Water *1/2 C. Cornmeal *1/4 C. Oat Bran LET STAND to absorb moisture ADD: *1/2 C. Ground Almonds or Walnuts *1/2 C. Ground Sunflower Seeds *1/2 C. cooked Lentils *1 C. cooked Garbanzos (Chick Peas) *1 C. Bread Crumbs *1 C. Squash, finely-chopped *2 Onions, finely-chopped *1 Green Bell Pepper, chopped *1/2 tsp. Celery Seed *1/2 tsp. Oregano or Savory *1/2 tsp. Salt or 2 tsp. Chicken-Style Seasoning (No MSG) MIX WELL, put into well-greased loaf pan. BAKE at 350F for approximately 45 minutes.

Lima Bean Casserole Recipe (Gluten-free, Egg-free, Dairy-free)

To make this delicious lima bean casserole, IN MIXING BOWL combine: *2 C. grated Carrots *2 C. Celery, chopped *1 C. Nuts, ground (Walnuts, Pecans, etc.) *1 C. shredded Cabbage *1 medium Onion, chopped *2 cloves Garlic, minced *1 Bell Pepper, chopped **2 C. Dry Bread or Cracker Crumbs OR 2 C. Cooked Quinoa or Rice *1 C. Cashew or Rice Milk *2 T. Oil *2 T. Chicken-Style Seasoning (No MSG) or 1 tsp. Cajun Seasoning *2 C. frozen Lima Beans, unthawed MIX and put into well-greased casserole dish BAKE at 350F for approximately 45 minutes **(Note from Cynthia re above recipe: if making this Gluten-Free you will want to use either GF bread crumbs (expensive) or 2 C. cooked quinoa, rice or millet-- the picture shows the casserole made with cooked quinoa.  Delicious topped with Tomato Pasta Sauce.)

Fresh Green Pea and Lettuce Soup Recipe (egg-free, dairy-free)

Fresh Green Pea Soup COMBINE the following over medium heat: *4 C. shelled Peas, (if frozen, thaw first) *2 Romaine Lettuce Hearts, chopped *1 tsp. Basil *4 C. Water or Vegetable Stock BRING TO A BOIL and SIMMER, covered, on LOW for 30 minutes with 2 Bay Leaves REMOVE Bay leaves and BLEND with a stick blender, or with a regular blender. ADD TO ABOVE: *2 T. rice Miso *1 c. chopped Green Onions *2 T. Chicken-Style Seasoning (No MSG)  Serve with a dollop of Cashew Sour Cream made as follows in clean blender: CASHEW SOUR CREAM: *1 C. DRY ROAST: 2 C. Slivered Almonds PRE-HEAT WOK or Deep Skillet SAUTE IN 1 T. Oil: 1 Onion, chopped ADD (stirring constantly to heat through): *1 Green Pepper, chunked *1 Red Pepper, chunked *1 Yellow Pepper, chunked *1 Zucchini, slant-cut pieces ADD: *1 C. Water * Chicken-Style Seasoning (No MSG) *ADD 1 package of Steam-Fried Noodles (or cook brown rice instead) COVER and Steam for 2-3 minutes ADD the slivered Almonds to serve (OPTIONAL: ADD 1 T. Miner's Kidney Bean Patties Recipe (egg-free, dairy-free)

COURSE GRIND 2 C. Sunflower Seeds (or chop in food processor) IN LARGE Bowl, MASH 1 large can Kidney Beans ADD: *Ground Sunflower Seeds *1 Onion, chopped *1 clove Garlic, minced *1 C. Mushrooms, grated *2 C. whole wheat Bread Crumbs SEASONINGS: Add your favorites, such as: Cajun, Curry, Chicken-style (No MSG), 1/2 tsp. Salt, 1/2 tsp. Pepper MIX all thoroughly and let stand to weld together FORM BALLS. If too wet to hold shape, add more crumbs or too dry and falling apart, add moisture. FORM PATTIES on pan BAKE at 450F on well-greased cookie sheet for about 20 minutes until beginning to brown. SERVE with Shirley Gong's Mushroom Gravy if desired.

Oat-Nut-Potato Patties Recipe (egg-free, dairy-free)

These nut-potato patties are crispy on the outside and yummy on the inside.   You can fry them (as Wyona indicates in her recipe below) or bake them  on a parchment-paper-covered pan at 400F for about 20 minutes . MIX TOGETHER: *1 C. Nuts, ground *1 C. mashed Potatoes *1 Onion, grated *1 tsp. Chicken-style Seasoning *1 T. Nutritional Yeast STIR 1/2 C. Oatmeal into 1 C. Boiling Water. LET STAND 10 minutes (or use leftover oatmeal porridge) ADD Oatmeal to Nut Mixture and MIX WELL. FORM into patties and dip into breading meal.(Recipe below) FRY until golden brown. BREADING MEAL: *1/2 C. wholewheat flour or fine bread crumbs or rolled oats *2 T. Nutritional Yeast

ROLL out Savory Pastry (see next line) LINE any pie or Quiche Pan with pastry ( Recipe for vegan Barley-Rice Pastry here ) or alternate recipe of your choice (example, a gluten-free pastry). FILLING: 2 T. vegan  Chicken-style Seasoning  (if you are reading this recipe in advance of making it, you will save money by making a jar of your own chicken-type seasoning mix-- you will know what's in it and you can adjust the seasonings to suit your preferences and needs) 1 T. Grilled Polenta with Tomato-Veggie Sauce

POLENTA is thick corn mush you can buy OR make this EASY recipe: BOIL 6 C. Water ADD  2 tsp. Celtic Sea Salt WHISK in  1 1/2 C . Organic Yellow CornMeal** LOWER HEAT and cook, stirring to keep from clumping and sticking to pot, for 15 minutes-1 hr. depending on the cornmeal-- fine meal cooks quickly, coarser meal takes longer.  Stir continually. TURN OFF HEAT and stir in 3 T. Vegan Butter (like "Earth Balance") POUR into a casserole pan, and COOL (it will continue to thicken while it cools) FILLING :  In skillet, SAUTÉ  until still crisp, but hot:                                          2 T. Barley and Corn Casserole

Delicious, nutritious corn and barley casserole This hearty casserole is also a roast vegetable stew-- it can be baked at 350F or just stir-fried on the stove-top and then put in a casserole pan to serve. A perfect potluck casserole. IN HEAVY SKILLET, sauté the following: 1 T. Coconut or other Oil 2 cloves Garlic, minced 1 Onion, chopped 3 C. Water (or Vegetable Stock) 1 C. Pot Barley 2 Carrots, diced COVER and Bake at 350F or Simmer about 1 hour ADD: 2 C.    Kernel Corn 1/2 C. Fresh Parsley, chopped 2  T.     Chicken-Style Seasoning , or Salt and Pepper to taste If baking, continue to bake until hot through (maybe 10-20 minutes for the corn depending on your oven) Health Note:  According to Health Canada and the U.S. Food and Drug Administration (FDA), consuming at least 3 grams of barley beta-glucan daily  can help lower blood cholesterol levels , which is a risk factor for cardiovascular diseases.
