Blueberry-Hibiscus Latte

A blueberry hibiscus latte, sweetened with maple syrup, offers a creamy, caffeine-free burst of summer. Perfect for cozy chats or solo sips!   Here is another tasty hot drink that doesn't keep you awake at night with a caffeine surge. The blueberry flavor reminds me of my BFF Linda because we went through a period of drinking blueberry tea when we met for our little world-fixing chats back in the day! Hibiscus is described as a powerhouse of nutrition. There are also a couple of cautions worth knowing about. You can read more about it here . I actually have quite a few blueberries in my freezer, so this is something I can enjoy often. I guess you could also make this latte using both hibiscus and blueberry tea, but I think most blueberry tea powders have something in them to amp up the flavor and you are probably better off using something more natural. Bumbleberry Corn Cake -- Vegan and Wheat-Free

       Bumbleberry Corn Cake- Vegan  Wheat-free The bumbleberry harvest is on with a flourish in our backyard. The saskatoons, blueberries, and blackberries have all had some ripenings this week-- although the blackberries are just beginning and the saskatoons are wizening their way out of the scene. "A mixture of any berries you have on hand" is a great definition of the bumbleberry.  Diversity is delicious!  This is a soft corn cake, like a berry pudding crossed with a cake, more like. Eat it on a plate with a fork and a dollop of coconut yogurt, Mmmm. It has a sweet crunchy crust.  For brekky, lunch or tea! Make it in your toaster/counter oven in a square or round 8 x 8 cake pan. (Can also use a regular oven) INGREDIENTS: 1/4 cup of grapeseed oil  2    cups of bumbleberries (a mix of your on-hand berries) 1/2 cup of cane sugar 1    lemon-- just the zest (the outer skin, not the white part, if possible-- shave it...

Very Berry Squares (Gluten-Free, Dairy-Free, Egg-Free) Recipe

Very Berry Squares with Date Cashew Cream Topping . PREHEAT OVEN TO 350F BOTTOM LAYER: MIX together the following: 1/2 C. Coconut Oil 1/2 C. Brown Rice Flour 1/2 C. Chickpea Flour 1 T. Potato Flour 2 T. Sugar 1 tsp. GF Baking Powder 1 C. fine Coconut 1/2 C. Nut Milk (to moisten) and PAT INTO BOTTOM OF SQUARE PAN lined with parchment paper. BAKE for 25-30 Minutes (until golden brown). Cool. TOPPING: IN SAUCEPAN: 1 C. Strawberries 1 C. Blackberries or Blueberries 2 C. Rhubarb (cut small- or other berries/fruit) BRING TO BOIL. TURN DOWN heat to SIMMER. ADD: 1 C. Sugar and a slurry of 4 T. Cornstarch in 1/2 C. Water STIR until thickened. POUR onto pan. CHILL until set.  Find Recipe for Date Cashew Cream HERE .
