  Here’s a set of three delicious vegan burrito recipes — each using a different ready-made vegan wrap — and each offering different options for spiciness (mild, medium, or hot, depending on your taste).   🌯 1. Best Scramble Tofu Mix - vegan, gluten-free

If you have ever made yourself some tofu scramble with the expectation that it will be a great sub for your favourite scramble eggs back in the day, well, you know that disappointment. I have to say, though, that there is a new kid in town! I don't know where I actually got this recipe from.  I just found it in scribbled into a book on my never-ending quest to quell the clutter in our home.  I think it may be out of a library cookbook, or maybe someone dictated it to me.  In any case, I apologize if it is your precious recipe.  I have changed some of the wording, and some of the ingredients. So, the glory of this actual recipe is in the mixture that you make up in advance and always have on hand when the urge for a tofu scramble hits! The flavour blend is outstanding.  I also like how the mix is set up to provide just enough of its herby deliciousness (1 1/2 Teaspoons per serving) so that there is not an imbalance in either flavour or moistness. OATBRAN MUFFINS (dairy-free, egg-free)

IN MIXING BOWL: *1 C. Boiling Water *1 C. Bran BLEND TOGETHER: *2 C. Soy or Rice Milk *1/2 C. Oil *1 T. Lemon Juice *1 Apple MIX TOGETHER: *1 C. Sugar *2 1/2 C. Flour *1/2 tsp. Salt *2 tsp. Non-Aluminum Baking Powder MIX all ingredients together gently, do not beat. SCOOP into well-greased muffin tins. BAKE at 400F about 15 minutes.

We are potato lovers in our family. We're a big old mix of Northern European and it is likely our ancestors ate potatoes, cabbage, and turnips from times immemorial. Potatoes are in our DNA. If you are a potato lover, too, I know you probably already like potato pancakes-- but these are VEGAN so no eggy factor. Have you tried a potato waffle yet?  You'll fall in love with it when you do! The first recipe is shown in the picture above-- Wyona's healthy vegetarian (or vegan) potato pancake. Only one tablespoon of oil. The  egg-replacer listed here is ground flax, but you could also use ground chia seed or a commercial egg replacer powder.  Wyona calls for amaranth, millet or quinoa flour, but I'm pretty sure you could use a mixed Gluten-Free flour of your choice. Cashew French Toast: Breakfast Recipe 1 C. Water 2 T. raw Cashews 4 pitted Dates 7 pieces of Bread 1/2 C. Fresh Orange Juice (or 2 T. OJ concentrate plus water to equal 1/2 C. fluid) 1 T. Whole Wheat Flour Whiz all but bread in blender until smooth.  Pour into shallow bowl.  Dip slices of bread into it and place on cookie sheet.  Bake at 400F until golden brown.  Turn and brown the other side.  Top with Applesauce, fresh fruit or fruit topping.  Yield: 7 servings A Gluten-Free Version (as in the picture- adapted by Cynthia from Wyona's Recipe above) 1 C. Baked Oatmeal: A delicious and healing breakfast!   No poured fats, dairy, eggs, margerine, or wheat! Preheat oven to 350 degrees F. Measure out ingredients: 2 C. rolled Oats 1/8 tsp. Coriander 1/6 tsp. Cardamon 1    tsp. Baking Powder (optional) 1/2 tsp. Sea Salt 1 Flax Egg (1 T. flax meal stirred into 2 1/2 T. warm water)  OR 3 1/2 T . Chia Gel 2 C. Almond Milk, unsweetened 1 C. Apple Sauce, unsweetened 1/4 C. Maple Syrup 1 tsp. Vanilla 1 large apple, peeled, and diced 1/2 C. Raisins 1/4 C. Coconut 3/4 C. chopped Walnuts or Hemp hearts (seeds) Zap the apple pieces for a minute or two in the microwave to soften them.  Set aside. Mix together oats, spices, baking powder and sea salt in a small dish.   In a larger bowl, combine the flax egg, almond milk, apple sauce, maple syrup and vanilla.  Add the dry ingredients to the wet ingredients and combine well.
