Perhaps you have followed a delicious-looking recipe for homemade soup and found, after the prescribed cooking time and more, that the soup is still very watery. While you were not necessarily in quest of a cream soup, did you want something more... substantial? Well, with a better ratio of chunkiness to liquids? Mock Turkey Soup Here is another one of the Cooking School demo soups.  If you are feeling the lack of a turkey soup the day-after the festive occasion, this is fast and easy to throw together!  And tasty, of course.  And healthier than the real bird (see this video by Dr. Michael Greger about eating poultry) IN SOUP POT: 3 Qts. Water 1 C. slivered or chopped Celery 1/2 to 1 C. chopped Carrots 1/2 C. Onion Flakes 2 cubes Organic Herbal Bouillon or 4 T. Homemade Broth/Bouillion Other veggies , as desired, such as sliced mushroom, green peas, green beans, etc. BRING TO BOIL TURN DOWN HEAT TO SIMMER for 5 Minutes ADD: 2 C. diced Firm Organic Tofu 2 T.  Chicken-style Seasoning  (No MSG) Other seasoning and salt/pepper to your taste Approximately 4 C. cooked Pasta

This is another wonderful soup recipe from the collection of Wyona Hertwig, foodie, artist, and kind human. Many of her recipes reflect the garden produce, fruit and herbs that would have been used in the recipes of her Mennonite ancestors who came to Canada from ''Russland'' (Russia). SOAK: 1 C. Barley groats, approximately 4 hours IN SOUP POT: 3 Qts. Water 1 C. pre-soaked Barley 2 medium Beets, coarse-grated BRING TO BOIL.  Then TURN DOWN HEAT to SIMMER 30 - 45 minutes. 1/2 C. Lentil, Green Pea, Barley Soup with a vegan Parmesan topping  This delightful and nourishing soup recipe is in memory of Wyona Hertwig, a delightful vegan cook, artist, and human being.  Soak overnight: 1 C. Lentils 1/2 C. Green Peas 1/2 C. Pot Barley IN SOUP POT: Soaked Lentils Peas 3 Qts. Water Barley BRING TO BOIL TURN DOWN heat to SIMMER approximately 15-20 minutes. ADD: 1 C. chopped Carrots or Tomatoes 1/2 C. chopped Celery 1 C. Onion Flakes OR 1 raw Onion, chopped 2 cubes Organic Low-Sodium Vegetable Bouillon 2 T. Warming Carrot-Beet Soup with a Dollop of Cashew Sour Creme STEAM for 15 minutes to tenderize: *5 large Carrots *1 large Beet, peeled LET COOL ADD all ingredients to blender: *1 Onion, chopped *2 C. Nut milk or Soy milk *2 T. Soy Sauce *2 Vegetable Bouillon cubes *1/2 tsp. Sea Salt *Pinch Kelp *Pinch Cayenne *1 T. Brown Sugar SIMMER for 10 minutes SERVE hot or cold. ADD a dollop of Fast Cashew Sour Creme:    === Blend together until SMOOTH: * 1 C. Raw Cashews *1 C. Water *Juice of 1 small Lemon or 1 Lime *1/2 T. Celtic Sea Salt *1 Small White Onion, chopped
