Perhaps you have followed a delicious-looking recipe for homemade soup and found, after the prescribed cooking time and more, that the soup is still very watery. While you were not necessarily in quest of a cream soup, did you want something more... substantial? Well, with a better ratio of chunkiness to liquids? And if you are against using wheat flour, whatever the reason might be, what can you do? If you have potatoes or carrots in your soup, you can separate them, cooked soft, and blend them up to return to the soup-- that will help thicken. Same with other starchy vegetables-- blend up at least a portion of the cooked soup and you will see the results you are looking for.  Cooking down the soup over a longer period of time-- say, an hour or so on simmer-- will also reduce the fluid levels. LENTIL and SQUASH POT PIE Recipe (egg-free, dairy-free)

                     Let's get right down to this delish lentil-butternut squash recipe! (*thanks to Jennifer Wong for the image above) In 4-Quart Pot: *2 C. Brown Lentils in 3 C. Water SOAK 2 - 3 hours or overnight. BRING TO BOIL . SIMMER approximately 1 hour. ADD : *4 c. Yellow or Orange Squash, diced *4 Vegetable Bouillon Cubes *2 tsp. Coriander *1/2 tsp. Cumin *2 cloves Garlic *2 large Onions, chopped fine SIMMER until Squash is tender. POUR into deep casserole dish or spoon into individual baking ramekins as in the photo above. SAVORY PASTRY TOPPING: WHISK together: *1/2 C. Oil *1/4 C. Water *1/2 tsp. Salt *1/4 tsp. Savory ADD to: *1 1/2 C. Whole Wheat Flour *2 T. Pumpkin Soup with Roasted Pumpkin Seeds as a garnish BAKE 1 medium Pumpkin or Squash until tender SAUTE 1 large Onion in 2 T. Oil ADD: *2 C. Nutmilk *1 tsp. Sea Salt *Pinch Cinnamon *Pinch Nutmeg *Pinch Cloves BLEND all above and SIMMER on low heat for 15 minutes GARNISH with slivered dry-roasted almonds              or roasted pumpkin seeds (above)
