Vegan Dill Pickle Feta Spread I tried a few recipes for vegan feta but none of them quite achieved the sharp, slightly acidic saltiness that I was looking for. I imagine I could have come close if I had used more salt (probably a lot more salt) and likely a juiced entire lemon. I think I may go for more lemon juice, but I definitely won't be 'upping' the salt level.  So. In an impulsive moment, prodded by the hungry adults in the other room, I jacked up the acidic code with a tablespoon of apple cider vinegar and another jolt of dried dill. When I next taste-tested it, I was reminded of dill pickles-- without actually having used such an ingredient. Dill pickles have become a luxury in this household (they are, i ndeed, also   a luxury item in the grocery store these days-- especially our preference, the dill pickles made by a more natural fermentation process.) Recipe for GARLICKY CASHEW SPAGHETTI SAUCE (Alfredo Sauce) - Vegan, Gluten-Free, Dairy-Free

Garlicky Cashew Alfredo Sauce on Baked Spaghetti Squash - Plant-Based Power with YUM COOK in Mushroom or Vegetable BROTH (2 cubes in 1 C. water) for 8 minutes, or until broth has gone way down, watching so it doesn't burn: 1 1/2 C. chopped ONION (about 3 small to medium size onions) ADD IN: 4 minced GARLIC for a couple of minutes BLEND ABOVE with the following: 1/2 T. CELTIC SEA SALT 1/4 tsp. fresh-ground BLACK PEPPER 1/2 C. RAW CASHEWS 1+ T. LEMON or LIME JUICE 1/4+ C. NUTRITIONAL YEAST If it is a little too thick to blend properly, add in a small amount more broth or hot water.  If you don't have a high-speed blender, like a VitaMix, be sure to soak the cashews for about 5 hours before-hand to make them easier to blend. Serve immediately over regular pasta or spaghetti squash.  

Cauliflower-Cashew Casserole

Luscious Cauliflower-Cashew Casserole • Parboil OR Steam 1 Minute 6 C. Cauliflower florets (or broccoli florets) • Add 2 coarsely grated Carrots • Add 2 stalks Celery, finely chopped (or mushrooms, as in the photo) In Blender, whiz the following until smooth: 2 C. Water,  1 Onion,  ½ C. Sunflower Seed Oil 2 T. Chicken Style Seasoning (no MSG) 1 T. Mrs. Dash Original 2 T. Corn Starch 2 C. Recipe for Melty Cheese (Vegan) (Gluten-free)

This vegan melty cheese recipe is everything you are looking for: creamy, tasty, cheesy, and easy to make! Oh, and no cholesterol-- so healthier as well! PUT INTO BLENDER: *2 c. water *4 OZ.Pimento, diced *1/4 C. Cashews  *1/2 T. Lemon Juice *1 1/2 tsp. Onion Powder *1/4 tsp. Garlic Powder *2-3 heaping T. Tapioca Starch (for that gooey-stringy cheesey effect!) *1-3 T. Nutritional Yeast Whiz together until smooth.  Cook in heavy saucepan until thick (5-6 minutes). Stir constantly. SUGGESTION: Let melty cheese cool if used as a dip.  If used as a sauce over vegetables, use hot. Two Recipes for Tomato Dressing (Vegan) (Gluten-free)

Two tomato sauces/dressings guaranteed to amp up your home or hospitality dining experience.     CREAMY TOMATO DRESSING *1 C. Water *1 C. Cashews *1/8 tsp. Garlic Salt *1/2 tsp. Onion Salt *1/4 C. Dry Onion *2 T. Lemon Juice *1 T. Nutritional Yeast *1 ripe Tomato WHIZ all ingredients in blender until smooth.  Use as a dressing, sandwich spread, or as a sauce for vegetable s.   Tomato-Lemon Dressing Blend together : *2 C. canned Tomatoes *1 C. Lemon Juice *1 C. Pineapple Juice *1/2 tsp. Salt *1 C. chopped Parsley *1 1/2 C. chopped Onion *1 clove Garlic , minced Lovely refreshing salad dressing.  Store in glass container with lid in fridge.

Curried Carrot and Cashew Cream Soup Recipe (egg-free, dairy-free)

Curried Carrot and Cashew Cream Soup SAUTE in large sauce pan in 2 T. Oil or Margerine: *1 medium Onion, chopped *2 cloves Garlic, minced *6 C. grated Carrot COVER above and let sweat 5 minutes BLEND: *4 C. Vegetable Stock or Water and Bouillon Cube *1 inch Ginger root, grated *1 tsp. Curry Powder *1/2 tsp. Salt *1 C. raw Cashews ADD to sauce pan and SIMMER on medium heat 10 minutes GARNISH with some grated Nutmeg ADD slurry of Cornstarch to thicken if needed (Alternatively, for a smoother, creamy soup, use 6C. chopped cooked or roasted carrots at the outset and add them to the blender along with the saute'd onion and garlic and other items. Simmer everything together, stirring to maintain smooth consistency.) Carrot-Mushroom Loaf smothered in Delicious Mushroom Gravy SAUTE: *1/4 C. oil *2 large onions, chopped *2 C. grated mushrooms (or fine-chopped) ADD ABOVE TO: *4 C. whole wheat bread crumbs or 4 C. oat flakes *2 C. raw carrots, grated *1 C. raw potato, grated *2 C. raw cashews, ground or fine-chopped *2 T. Date Cashew Cream on Very Berry Squares BLEND TOGETHER: *1 C. Water *1 C. Cashews *7-9 Dates (softened in hot water, pits removed) *2 T. Coconut *1 T. Lemon or Orange zest, finely grated *Pinch of Salt *1/4 C. Lemon Juice *2 T. Tapioca Starch LET STAND or refrigerate.

Yummy Oatmeal Cookie Recipe (Dairy-Free, Egg-Free, Sugar-Free)

           These are old,-fashion delicious oatmeal cookies. But vegan. You decide what you want to add in-- we have made some suggestions.  BLEND: 1 C. Water 1/2 C. Cashews or pre-soaked Almonds 1/2 C. chopped Dates 1 tsp. Vanilla 1/2 tsp. Salt Wiz until smooth. SLOWLY ADD 1/2 C. Oil (Grapeseed or Sunflower Seed Oil) EMPTY into large bowl ADD: 1/4 C. Lemon Juice STIR gently, to thicken. ADD: 1/2 C. chopped Nuts  1 C. Raisins 1/4 C. All-purpose or gluten-free Flour 1/4 C. Tapioca Flour 2 C. Quick Rolled Oats LET STAND 10 minutes DROP by spoonful onto well-greased cookie sheet BAKE at 350F about 20 minutes until browning.

Cashew French Toast: Breakfast Recipe

Cashew French Toast: Breakfast Recipe 1 C. Water 2 T. raw Cashews 4 pitted Dates 7 pieces of Bread 1/2 C. Fresh Orange Juice (or 2 T. OJ concentrate plus water to equal 1/2 C. fluid) 1 T. Whole Wheat Flour Whiz all but bread in blender until smooth.  Pour into shallow bowl.  Dip slices of bread into it and place on cookie sheet.  Bake at 400F until golden brown.  Turn and brown the other side.  Top with Applesauce, fresh fruit or fruit topping.  Yield: 7 servings A Gluten-Free Version (as in the picture- adapted by Cynthia from Wyona's Recipe above) 1 C. Water 2 T. raw Cashews or 2 T. raw Sunflower Seeds 4 pitted Dates 8 pieces of Gluten-Free Bread (usually smaller) 1/2 C. Fresh Orange Juice (or 2 T. MIX 1 C. fine Corn Flour and 1 C. Water ADD 2 C. Boiling Water IN SEPARATE PAN put 1/3 C. AgarAgar-- Soak in 1/2 C. Warm Water ADD: 1/4 C. finely ground Cashews 1/4 C. fine Nutritional Yeast 1/4 tsp. Salt Pinch of Garlic Powder 1 T. Onion Powder 2 T. Lemon Juice WHIZ all ingredients in blender and pour into a mold to cut into squares when chilled.
