No Frills Healthy: Black Bean Soup

Enjoy this simple no-frills and healthy black bean soup.  You can start the soup by soaking the dry beans overnight to use in the soup , or you can just open a couple of cans of beans .  Buying dry organic beans is definitely a less expensive way to go.  Growing your own beans and drying them is better yet!  Whatever works for you! INGREDIENTS: 2 cups of black beans (soaked overnight or from a can) 2 onions, chopped 2 carrots, chopped 2 stalks of celery, chopped 2 teaspoons salt 5-6 cups of water 2 teaspoons basil (see below**) METHOD: If using soaked beans, drain and rinse the beans and put them in a pot with a tight-fitting lid and all the other ingredients and simmer for 4 hours, covered.  Add more water if needed.  If using canned beans, use slightly less water and simmer for about 30 minutes until all vegetables are tender.   Press the soup through a sieve or whirl up in a blender with a little extra water. Curried Lentil Dip or Spread (gluten-free, egg-free, dairy-free)

IN MEDIUM POT, Bring to a boil: *1 C. Red Lentils in *2 1/2 C. Filtered Water Turn it down to Low when it has boiled and simmer for about 20 minutes. IN A SKILLET, SAUTE TOGETHER (for about 5 minutes): *1 T. Coconut Oil *1 C. diced Onions *1 1/2 C. diced Apple (peeled and cored) *3 Garlic Cloves, grated or minced *dash of Celtic Sea Salt ADD to the above: *1/2 C. Raisins *1 tsp. Curry Powder and continue to cook for another 20 minutes on LOW. ADD all of the above to a Food Processor and process with: *1/4 C. Coconut Milk *2 T. Fresh-squeezed Lemon Juice *1/2 tsp. Celtic Sea Salt (or to taste) This is a delicious high protein, low fat vegan dip that will disappear almost as soon as you set it on the table at a Potluck.  Dip with multi-grain pita (or GF), fresh crudite (raw veggies), pineapple spears, mango chunks, ?? Recipe for GARLICKY CASHEW SPAGHETTI SAUCE (Alfredo Sauce) - Vegan, Gluten-Free, Dairy-Free

Garlicky Cashew Alfredo Sauce on Baked Spaghetti Squash - Plant-Based Power with YUM COOK in Mushroom or Vegetable BROTH (2 cubes in 1 C. water) for 8 minutes, or until broth has gone way down, watching so it doesn't burn: 1 1/2 C. chopped ONION (about 3 small to medium size onions) ADD IN: 4 minced GARLIC for a couple of minutes BLEND ABOVE with the following: 1/2 T. CELTIC SEA SALT 1/4 tsp. fresh-ground BLACK PEPPER 1/2 C. RAW CASHEWS 1+ T. LEMON or LIME JUICE 1/4+ C. NUTRITIONAL YEAST If it is a little too thick to blend properly, add in a small amount more broth or hot water.  If you don't have a high-speed blender, like a VitaMix, be sure to soak the cashews for about 5 hours before-hand to make them easier to blend. Serve immediately over regular pasta or spaghetti squash.  

Mexican Vegetable Stew Recipe (gluten-free, dairy-free, egg-free)

Mexican Vegetable Stew-- mucho gusto! In 4-Quart Pot: *2 C. Water *4 cubes Organic Vegetable Bouillon *2 Onions, sliced *1 red Bell Pepper,chopped *4 red Potatoes, sliced *1 small Zucchini, diced *2 C. cooked Pinto Beans *2 T. Lime or Lemon Juice *1 tsp. Cumin *1 clove Garlic, minced *1 tsp. Oregano *1/2 tsp. Chipolte *1/2 C. Cilantro, chopped *Seasonings of Choice BRING TO BOIL: Turn down heat to simmer 10 minutes OPTIONAL: 1 can diced Tomatoes

Winter Vegetable Pie Recipe (egg-free, dairy-free)

Winter Vegetable Pie with Gluten-Free Crust (see bottom GL recipe)-- and my friend gave me some local-grown Bay Leaf! SAUTE: *2 T. Oil *2 medium Onions, chopped *2 Potatoes, diced *2 Carrots, diced *1 Parsnip, diced (or, as in picture, dice an additional carrot if you have no parsnips) ADD: *1/2 C. - 1 C.Water *2 Tomatoes, diced *1 C. Frozen Baby Peas *2 Bay Leaves (discard after heated) *1/2 tsp. Salt *1/2 tsp. Savory *1/2 tsp. Cumin *1/4 tsp. Nutmeg SIMMER until veggies are tender, then thicken with slurry of: *1 T. Flour (or 1 T. Potato or other Starch if Gluten-Free) *1/2 C. Water POUR into BAKED Savory Pastry pie shell and hold in warm oven until serving time. ALTERNATE: GLUTEN-FREE SAVOURY PIE CRUST Ingredients ½ cup Coconut Oil or other solid, all vegetable non-dairy shortening 2 to 4 T. ice water *1¼ cups All Purpose Gluten Free Flour Blend (and 1 tsp. Xanthan  Gum if there is none in the mix) plus more for rolling 1 tsp. Celtic Sea Salt 1 ...

LENTIL and SQUASH POT PIE Recipe (egg-free, dairy-free)

                     Let's get right down to this delish lentil-butternut squash recipe! (*thanks to Jennifer Wong for the image above) In 4-Quart Pot: *2 C. Brown Lentils in 3 C. Water SOAK 2 - 3 hours or overnight. BRING TO BOIL . SIMMER approximately 1 hour. ADD : *4 c. Yellow or Orange Squash, diced *4 Vegetable Bouillon Cubes *2 tsp. Coriander *1/2 tsp. Cumin *2 cloves Garlic *2 large Onions, chopped fine SIMMER until Squash is tender. POUR into deep casserole dish or spoon into individual baking ramekins as in the photo above. SAVORY PASTRY TOPPING: WHISK together: *1/2 C. Oil *1/4 C. Water *1/2 tsp. Salt *1/4 tsp. Savory ADD to: *1 1/2 C. Whole Wheat Flour *2 T.
