    Here are 3 fresh, low-fat, vegan spring roll recipes inspired by traditional Asian flavors, each with a unique twist on the filling, wrapper, and dipping sauce. Pecan Nut Roast (Vegan, No Added Oils, Gluten-Free)

This pecan nut roast is one of the most popularly viewed recipes on this site.  And it should be cooked up anytime you want a simple, delicious, high nutrient-dense dish for your family or to take to a potluck. Watch this short video  where Dr. Michael Greger of NutritionFacts.org explains what scientific studies show to be the health benefits of the pecan in staving off cancer!  Measure and assemble the following ingredients: 4 C. Water 1 C. Pecan Halves (or pieces) 1 1/2 tsp. Salt 1 T. Chicken-style Seasoning (Optional) 1 T. Nutritional Yeast 1 T. Turmeric powder (Optional) 1 C. Chopped Onions 3 C. Rolled Oats Blend together: Water, Pecans, Salt, Chicken-Like Seasoning, Nutritional Yeast, Turmeric (no pecans?  Substitute walnut pieces). Cherry-Apple Pecan Crisp (Vegan, Uber-rich)

Extremely yummy Cherry-Apple Pecan Crisp This particular recipe is a little too rich with nuts and oil to be considered a "classic" Adventist dessert recipe-- but you could cut the oil and leave out the pecans and have a fairly yummy dessert, but... Let's just consider this something to set aside to be eaten in small portions at a celebratory meal instead of cake.  I left the skins on the apples, so there is probably more fibre in this delicious pudding than there is in, say, chocolate cake. But enough of the rationalizing of tastiness... INGREDIENTS: 2 C.     Dark Sweet Cherries, frozen, from Costco 3         Large Tart Organic Apples , cored, chopped into small pieces 1/3 C. Maple Syrup 2 T.     Tapioca Starch (or 3 T. Corn or other Starch) Juice of 1/2 organic Lemon 1 tsp.   Pumpkin Pie Spice or just 1/2 tsp. This particular recipe is an old-fashioned one with pecans and sunflower seeds as the major protein base, and a fairly simple combination of other ingredients. Please look for subs for any ingredients that you or others might be allergic or sensitive to. It comes together nicely and makes a nutritious, delicious cereal, ingredient mix for cookies, and an energy source for hiking and camping. Did you know that pecans are at the top of the health chart with walnuts in preventing some cancers? Oat-Nut-Potato Patties Recipe (egg-free, dairy-free)

These nut-potato patties are crispy on the outside and yummy on the inside.   You can fry them (as Wyona indicates in her recipe below) or bake them  on a parchment-paper-covered pan at 400F for about 20 minutes . MIX TOGETHER: *1 C. Nuts, ground *1 C. mashed Potatoes *1 Onion, grated *1 tsp. Chicken-style Seasoning *1 T. Nutritional Yeast STIR 1/2 C. Oatmeal into 1 C. Boiling Water. LET STAND 10 minutes (or use leftover oatmeal porridge) ADD Oatmeal to Nut Mixture and MIX WELL. FORM into patties and dip into breading meal.(Recipe below) FRY until golden brown. BREADING MEAL: *1/2 C. wholewheat flour or fine bread crumbs or rolled oats *2 T. Nutritional Yeast

Company Baked Oatmeal: Breakfast Recipe

Baked Oatmeal: A delicious and healing breakfast!   No poured fats, dairy, eggs, margerine, or wheat! Preheat oven to 350 degrees F. Measure out ingredients: 2 C. rolled Oats 1/8 tsp. Coriander 1/6 tsp. Cardamon 1    tsp. Baking Powder (optional) 1/2 tsp. Sea Salt 1 Flax Egg (1 T. flax meal stirred into 2 1/2 T. warm water)  OR 3 1/2 T . Chia Gel 2 C. Almond Milk, unsweetened 1 C. Apple Sauce, unsweetened 1/4 C. Maple Syrup 1 tsp. Vanilla 1 large apple, peeled, and diced 1/2 C. Raisins 1/4 C. Coconut 3/4 C. chopped Walnuts or Hemp hearts (seeds) Zap the apple pieces for a minute or two in the microwave to soften them.  Set aside. Mix together oats, spices, baking powder and sea salt in a small dish.   In a larger bowl, combine the flax egg, almond milk, apple sauce, maple syrup and vanilla.  Add the dry ingredients to the wet ingredients and combine well.
