  Here’s a set of three delicious vegan burrito recipes — each using a different ready-made vegan wrap — and each offering different options for spiciness (mild, medium, or hot, depending on your taste).   🌯 1.        Bumbleberry Corn Cake- Vegan  Wheat-free The bumbleberry harvest is on with a flourish in our backyard. The saskatoons, blueberries, and blackberries have all had some ripenings this week-- although the blackberries are just beginning and the saskatoons are wizening their way out of the scene. "A mixture of any berries you have on hand" is a great definition of the bumbleberry.  Diversity is delicious!  This is a soft corn cake, like a berry pudding crossed with a cake, more like. Eat it on a plate with a fork and a dollop of coconut yogurt, Mmmm. It has a sweet crunchy crust.  For brekky, lunch or tea! Make it in your toaster/counter oven in a square or round 8 x 8 cake pan. Warming, delicious Curried Yam and Lentil Soup (Gluten-Free, Vegan) This soup was not actually demo'd in any of our cooking classes, but my good friend Mary Lou Johnson made it for a recent Church potluck and I feel that the recipe deserves to be on our website.  It's a 'brothy' curry soup, meaning that it isn't whirred up with a blender.  The flavours meld together so nicely, it was perfect during a time of joyful fellowship on a cool rainy day, and I'm sure you'll enjoy it too if you try it! INGREDIENTS: 2 T. Coconut Oil 1 medium Onion , roughly chopped 3 cloves Garlic , minced 1 T. fresh Ginger , grated 2 T. Curry Powder 1 tsp. Celtic Sea Salt (and those 82+minerals) 1/s tsp. Black Pepper 4 chopped plum Tomatoes (or 1- 14 oz. can chopped Tomatoes) 1 C. dry Green Lentils 1 qt./liter of Vegetable Stock or Water 1- 14 fl.oz. C. Vegan Potato Casserole (egg-free, dairy-free)

Vegan Potato Casserole - real comfort food  *Approximately 6 Cups peeled, cooked potatoes *Cool and DICE the potatoes with 2 Cups of Cashew Sour Cream (recipe follows): CASHEW SOUR CREAM: *1 C. Water *1 C. raw Cashews *1 T. Lemon juice *1/2 tsp. Celtic Sea Salt *1 T. Coconut Oil, melted over hot water ADD TO ABOVE: *1 c. chopped Green Onions or Chives *2 T.  Chicken-Style Seasoning (No MSG) *Fake Bacon Baco-Bits or diced organic smoked tofu (optional) MIX WELL, and then turn into a shallow casserole dish. SPRINKLE on 1 or more cups Toasted Cashew pieces and seasoned Croutons *Heat through in the oven Other DIY Sour Cream Recipes (Dairy Free) Almond Sour Cream Soya Tasty (Tofu) Sour Cream

Barley and Corn Casserole

Delicious, nutritious corn and barley casserole This hearty casserole is also a roast vegetable stew-- it can be baked at 350F or just stir-fried on the stove-top and then put in a casserole pan to serve. A perfect potluck casserole. IN HEAVY SKILLET, sauté the following: 1 T. Coconut or other Oil 2 cloves Garlic, minced 1 Onion, chopped 3 C. Water (or Vegetable Stock) 1 C. Pot Barley 2 Carrots, diced COVER and Bake at 350F or Simmer about 1 hour ADD: 2 C.    Kernel Corn 1/2 C. Fresh Parsley, chopped 2  T.     Chicken-Style Seasoning , or Salt and Pepper to taste If baking, continue to bake until hot through (maybe 10-20 minutes for the corn depending on your oven) Health Note:  According to Health Canada and the U.S. Food and Drug Administration (FDA), consuming at least 3 grams of barley beta-glucan daily  can help lower blood cholesterol levels , which is a risk factor for cardiovascular diseases.
