Gluten-free, Plant-based Ragout with Cornmeal Dumplings

  This main-dish bean stew, or ragout, is a delicious harvest veggie recipe, or a hearty winter entree. It is a satisfying mix of spicy flavours, that you can accommodate to your own palate, and topped with yummy home-made plant-based cheesy, gluten-free cornmeal dumplings. Cook this in either a Dutch oven over medium heat, or in your Instant Pot. It makes six good size servings.  INGREDIENTS: 1 tablespoon olive oil 2 large onions, chopped 3 cloves garlic, minced 2-3 tablespoons chili powder (again, your choice.        Bumbleberry Corn Cake- Vegan  Wheat-free The bumbleberry harvest is on with a flourish in our backyard. The saskatoons, blueberries, and blackberries have all had some ripenings this week-- although the blackberries are just beginning and the saskatoons are wizening their way out of the scene. "A mixture of any berries you have on hand" is a great definition of the bumbleberry.  Diversity is delicious!  This is a soft corn cake, like a berry pudding crossed with a cake, more like. Eat it on a plate with a fork and a dollop of coconut yogurt, Mmmm. It has a sweet crunchy crust.  For brekky, lunch or tea! Make it in your toaster/counter oven in a square or round 8 x 8 cake pan. Mock Turkey Soup Here is another one of the Cooking School demo soups.  If you are feeling the lack of a turkey soup the day-after the festive occasion, this is fast and easy to throw together!  And tasty, of course.  And healthier than the real bird (see this video by Dr. Michael Greger about eating poultry) IN SOUP POT: 3 Qts. Water 1 C. slivered or chopped Celery 1/2 to 1 C. chopped Carrots 1/2 C. Onion Flakes 2 cubes Organic Herbal Bouillon or 4 T. Homemade Broth/Bouillion Other veggies , as desired, such as sliced mushroom, green peas, green beans, etc. BRING TO BOIL TURN DOWN HEAT TO SIMMER for 5 Minutes ADD: 2 C. diced Firm Organic Tofu 2 T.  Chicken-style Seasoning  (No MSG) Other seasoning and salt/pepper to your taste Approximately 4 C. cooked Pasta

Curried Lentil Dip or Spread (gluten-free, egg-free, dairy-free)

IN MEDIUM POT, Bring to a boil: *1 C. Red Lentils in *2 1/2 C. Filtered Water Turn it down to Low when it has boiled and simmer for about 20 minutes. IN A SKILLET, SAUTE TOGETHER (for about 5 minutes): *1 T. Coconut Oil *1 C. diced Onions *1 1/2 C. diced Apple (peeled and cored) *3 Garlic Cloves, grated or minced *dash of Celtic Sea Salt ADD to the above: *1/2 C. Raisins *1 tsp. Curry Powder and continue to cook for another 20 minutes on LOW. ADD all of the above to a Food Processor and process with: *1/4 C. Coconut Milk *2 T. Fresh-squeezed Lemon Juice *1/2 tsp. Celtic Sea Salt (or to taste) This is a delicious high protein, low fat vegan dip that will disappear almost as soon as you set it on the table at a Potluck.  Dip with multi-grain pita (or GF), fresh crudite (raw veggies), pineapple spears, mango chunks, ?? Recipe for GARLICKY CASHEW SPAGHETTI SAUCE (Alfredo Sauce) - Vegan, Gluten-Free, Dairy-Free

Garlicky Cashew Alfredo Sauce on Baked Spaghetti Squash - Plant-Based Power with YUM COOK in Mushroom or Vegetable BROTH (2 cubes in 1 C. water) for 8 minutes, or until broth has gone way down, watching so it doesn't burn: 1 1/2 C. chopped ONION (about 3 small to medium size onions) ADD IN: 4 minced GARLIC for a couple of minutes BLEND ABOVE with the following: 1/2 T. CELTIC SEA SALT 1/4 tsp. fresh-ground BLACK PEPPER 1/2 C. RAW CASHEWS 1+ T. LEMON or LIME JUICE 1/4+ C. NUTRITIONAL YEAST If it is a little too thick to blend properly, add in a small amount more broth or hot water.  If you don't have a high-speed blender, like a VitaMix, be sure to soak the cashews for about 5 hours before-hand to make them easier to blend. Serve immediately over regular pasta or spaghetti squash.  

Vegan Potato Casserole (egg-free, dairy-free)

Vegan Potato Casserole - real comfort food  *Approximately 6 Cups peeled, cooked potatoes *Cool and DICE the potatoes with 2 Cups of Cashew Sour Cream (recipe follows): CASHEW SOUR CREAM: *1 C. Water *1 C. raw Cashews *1 T. Lemon juice *1/2 tsp. Celtic Sea Salt *1 T. Coconut Oil, melted over hot water ADD TO ABOVE: *1 c. chopped Green Onions or Chives *2 T.  Chicken-Style Seasoning (No MSG) *Fake Bacon Baco-Bits or diced organic smoked tofu (optional) MIX WELL, and then turn into a shallow casserole dish. ANOTHER Melty Cheez Recipe (Vegan, Egg-free, Dairy-free, Gluten-Free)

There are already several recipes for Vegan Cheez recipes on this site, each a little different from the other, so why another one?  Well, I was thinking about my fave store-bought vegan cheese (Daiya brand) and recall that its main ingredient is tapioca starch.  I thought I could make a pretty nice melty cheese with that in mind, and I did!  Here is a picture of the ingredients: 1. In a pot on medium heat, measure in the following and whisk together for about 30 seconds or so: 4 T. Coconut Oil 5 T. Tapioca Flour/Starch 2. Slowly add in: 2 1/2 C. non-dairy Mylk (I used the Coconut-Almond Milk Combo) 3. When the mix is blended and bubbly, turn the heat down to low and whisk in the following: 2 T. , rounded, Nutritional Yeast 1 T. Garlic Powder 1/2 tsp. Celtic Sea Salt 1/2 tsp. Celery, chopped *IF USING FRESH CORN, natural starch will thicken chowder. If using canned or frozen corn, you will need to add 2 T. Flour (OR 2 T. starch for Gluten-free chowder) *Salt and Pepper and/or Mrs. Dash to taste *ADD THICK, smooth Almond Cream (Blend 1 C. Water to 1 C.
