High Protein Chickpea-Tofu Cheesecake-- 3 Ways

                                         Maybe you have seen the delicious dark chocolate vegan cheesecake whose major ingredients are chickpeas and firm tofu? I got to thinking that, hey, other vegan cheesecakes could have this same unusual foundation and be just as yummy (and high protein, for those who are looking for additional protein in their vegan diet). Potato Soup - No Frills Healthy- No Poured Oils, Vegan

This recipe is simple and is suitable to a diet where poured oils are restricted.  It's about as vegan as you will ever see in an "Irish" recipe.  My grandmother used to make a similar potato soup, and I miss her and the soup.  Happy St Patrick's Day! Oil-Free Potato Soup Recipe INGREDIENTS: 4 large Potatoes 2 large Onions 2 cups/473 ml. Water 1 teaspoon/ 5.92 g  Salt 1 tablespoon/8 g  Whole Grain or Gluten-free Flour 2 cups/475ml. Non-Dairy Milk METHOD: Dice potatoes and onions into small pieces  Mix all ingredients (except Milk) in a blender and add the potatoes and onions Cook, stirring occasionally When the veggies are fork-tender, add the milk. Warm to just about boiling (but do not boil) Cooked barley and/or mint give it a delightful flavour and texture. (My Grandmother added black pepper). Russian Potato-Green Bean-Sauerkraut Soup (Vegan, Gluten-Free)

A bowl of this delectable Russian potato-green bean-sauerkraut soup (or borscht) will satisfy your tastebuds and your need for something warming and filling on a cold fall or winter evening.  I have vegan-ized the recipe to eliminate any animal products and use an easy-peasy cashew sour cream recipe that you can find on our Veggie School site HERE , or feel free to use a commercial vegan sour cream (or even the real stuff if you are flexitarian). There is no flour thickener, so no worries about gluten. INGREDIENTS 1 T. Coconut Oil (or veggie oil of choice) 1 large or 2 medium Onions , cut in half and sliced thin 2 C. Delicious Creamy Green Bean, Potato, Garlic Soup - Vegan, Gluten-Free

This Green Bean-Potato-Garlic Soup is an invention as the result of coming home from the Church fellowship dinner with about a pound of cooked organic Green Beans (the really long ones that you get in the freezer at Costco, if you're lucky-- *Family Tradition* Brand). The beans had already been frozen and thawed, I didn't want to risk illness by going through the process again.  And I confess, I'm hooked on green beans. Before cooking this soup, assemble, measure out and prep: ~Garlic Cloves, slivered or minced (quantity up to you) ~1 pound Green Beans, bite size pieces ~4 medium large Potatoes, peeled and diced ~1/4 tsp. Marjoram powder (or other desired herb) ~Filtered Water, to cover ~1 C. Almond Milk (unsweetened)   ~Salt and Pepper to taste ~Daiya Shreds for garnish (optional) (or other vegan cheese, or not) Add all ingredients above (except the Almond Milk, Salt and Pepper and Daiya Shreds) to a large pot and bring the water to a boil. ...

Corn-Potato Chowder - image from Pinterest *2 C. Potato, cubed *1/2C. Carrot, diced *2 C. Corn Niblets (or Cream Corn) *1 Onion, chopped fine *1/2C. Celery, chopped *IF USING FRESH CORN, natural starch will thicken chowder. If using canned or frozen corn, you will need to add 2 T. Flour (OR 2 T. starch for Gluten-free chowder) *Salt and Pepper and/or Mrs. Dash to taste *ADD THICK, smooth Almond Cream (Blend 1 C. Water to 1 C. Washington Chowder IN 2-QUART SAUCE PAN: *1/4 C. Oil *1 C. Chopped Onion *1 C. Chopped Celery *2 C. Diced Potato *2 C. Cubed Tomatoes *1/4 tsp. Savory *1 tsp. Salt *Pepper to taste ADD: 3 C. Water SIMMER 10- 15 Minutes ADD: Cashew Cream (1 C. Water to 1/2 C. Cashews blended smooth) If chowder is too watery, add a slurry of 1/4 C. Water and 1 T. Cornstarch OPTIONAL: 1 clove Minced Garlic

2 Qts. Water 2 C. diced Green Beans 2 C. diced Carrots 1 T. Onion Flakes 2 Bay Leaves 2 fresh Savory sprigs or 1 T. dry Savory Flakes BRING TO BOIL TURN DOWN HEAT and let SIMMER 15 minutes ADD: 3 C. diced Potatoes 2 T. Chicken-style Seasoning (No MSG) SIMMER 15 minutes and serve with dollop of  Cashew Sour Cream Recipe: CASHEW SOUR CREAM: *1 C. Water *1 C. raw Cashews *1 T. Lemon juice *1/2 tsp. Sea Salt *1 T. Coconut Oil, melted over hot water

"Sham Chowder" Mushroom Soup Recipe (egg-free, dairy-free)

"Sham" Chowder- tastes better than the 'real' thing... and healthier too INGREDIENTS SAUTE in 2 Quart pan in 2 T. Oil: *4 large Oyster Mushrooms, sliced *1 medium Onion, chopped *2 cloves Garlic, minced ADD: *1 Quart Water and 2 cubes Low Sodium Bouillon  *1 C. chopped Celery *3 Potatoes, diced SIMMER for 10 mintues and ADD: *1 T. Mrs. Dash Original ADD: *2 C. Cashew or Almond Cream (2 C. Water + 1 C. Cashews or Almonds blended) *Salt to taste For a New England flavor, add Simulated Bacon Bits.
