Pumpkin Bread Recipe (egg-free, dairy-free)

IN BLENDER WHIZ together: *1/4 C. Oil Delicious Pumpkin Bread  *1 Apple, chopped *1/2 tsp. Salt POUR into Mixing Bowl STIR IN: *1 C. mashed or canned Pumpkin In a Second Mixing Bowl, combine: DRY INGREDIENTS: *1/2 C. Slivered Almonds *1/3 C. Raisins *1 1/2 C. Whole Wheat Flour *3 tsp. Non-Aluminum Baking Powder ADD the wet ingredients above to the dry ingredients. POUR into well-greased loaf pan or muffin tins. BAKE at 375F for 45 minutes or until toothpick inserted in center comes out clean. COOL in pan and turn out. Vegetable Hot Pot Recipe (egg-free, dairy-free)

This veggie hot pot has the usual root veg, celery AND turnip and apple in it! Yum! PARBOIL 2 large Potatoes, sliced The bottom layer before the potatoes go on RESERVE for topping SAUTE in 2 T. Oil: *1 Leek OR 1 bunch of Green Onions, coarsely chopped *2 cloves Garlic, minced ADD the following chopped vegetables: *1 large Carrot *2 Celery Stalks *1 Turnip, medium *2 C. Water *Salt and Pepper to taste SIMMER a few minutes ADD: *1 Apple, sliced *1 tsp. Sage or Savory *2 T. Lemon Juice PUT into the casserole dish COVER with parboiled potatoes SPRINKLE with Parsley Flakes and grated Non-Dairy Cheese BAKE at 350F to heat through and melt cheese. The top layer of parboiled potatoes, chopped parsley and a few Daiya 'cheese' shreds 

OATBRAN MUFFINS (dairy-free, egg-free)

IN MIXING BOWL: *1 C. Boiling Water *1 C. Bran BLEND TOGETHER: *2 C. Soy or Rice Milk *1/2 C. Oil *1 T. Lemon Juice *1 Apple MIX TOGETHER: *1 C. Sugar *2 1/2 C. Flour *1/2 tsp. Salt *2 tsp. Non-Aluminum Baking Powder MIX all ingredients together gently, do not beat. SCOOP into well-greased muffin tins. BAKE at 400F about 15 minutes.

Cowboy Cake Recipe (Egg-Free, Dairy-Free)

COWBOY CAKE -- recipe from a Vegetarian Cooking Class by Wyona Hertwig BRING TO BOIL: *2 C. Raisins in 4 C. Water SIMMER 10 minutes and let cool. COMBINE DRY INGREDIENTS: *3 1/2 C. Flour *1 C. Sugar *2 tsp. non aluminum Baking Powder *2 tsp. Cinnamon *1 tsp. Nutmeg *1 tsp. Cloves BLEND 1 C. Oil and 1 raw Apple (instead of 2 Eggs) MIX all ingredients together. POUR into well-greased 9 x 13 inch pan SPRINKLE with topping of: *1 C. Brown Sugar *2 T. Flour *1 C. Nuts, chopped *2 T. Oil, and toss lightly. BAKE @ 350F about 45 minutes to 1 hour. Pecan Fiber Fruit Cookies Recipe (Dairy-free, Egg-free)

These delicious Pccan Fiber-Fruit cookies are the best treat food that also works to keep you healthy. When you bake these beauties, you know exactly what you are getting. Pecans are particularly tasty in cookies! And did you know that pecans are at the top of the health chart with walnuts in working to prevent some cancers? I was so thrilled to find this out, because pecans are my favourite nut-- well, next to my health nut husband. Company Baked Oatmeal: Breakfast Recipe

Baked Oatmeal: A delicious and healing breakfast!   No poured fats, dairy, eggs, margerine, or wheat! Preheat oven to 350 degrees F. Measure out ingredients: 2 C. rolled Oats 1/8 tsp. Coriander 1/6 tsp. Cardamon 1    tsp. Baking Powder (optional) 1/2 tsp. Sea Salt 1 Flax Egg (1 T. flax meal stirred into 2 1/2 T. warm water)  OR 3 1/2 T . Chia Gel 2 C. Almond Milk, unsweetened 1 C. Apple Sauce, unsweetened 1/4 C. Maple Syrup 1 tsp. Vanilla 1 large apple, peeled, and diced 1/2 C. Raisins 1/4 C. Coconut 3/4 C. chopped Walnuts or Hemp hearts (seeds) Zap the apple pieces for a minute or two in the microwave to soften them.  Set aside. Mix together oats, spices, baking powder and sea salt in a small dish.   In a larger bowl, combine the flax egg, almond milk, apple sauce, maple syrup and vanilla.  Add the dry ingredients to the wet ingredients and combine well.
