    Here are 3 fresh, low-fat, vegan spring roll recipes inspired by traditional Asian flavors, each with a unique twist on the filling, wrapper, and dipping sauce. Recipe for Mock Turkey Noodle Soup (Vegan)

Mock Turkey Soup Here is another one of the Cooking School demo soups.  If you are feeling the lack of a turkey soup the day-after the festive occasion, this is fast and easy to throw together!  And tasty, of course.  And healthier than the real bird (see this video by Dr. Michael Greger about eating poultry) IN SOUP POT: 3 Qts. Water 1 C. slivered or chopped Celery 1/2 to 1 C. chopped Carrots 1/2 C. Onion Flakes 2 cubes Organic Herbal Bouillon or 4 T. Homemade Broth/Bouillion Other veggies , as desired, such as sliced mushroom, green peas, green beans, etc. BRING TO BOIL TURN DOWN HEAT TO SIMMER for 5 Minutes ADD: 2 C. diced Firm Organic Tofu 2 T.  Chicken-style Seasoning  (No MSG) Other seasoning and salt/pepper to your taste Approximately 4 C. cooked Pasta

Pecan Nut Roast (Vegan, No Added Oils, Gluten-Free)

This pecan nut roast is one of the most popularly viewed recipes on this site.  And it should be cooked up anytime you want a simple, delicious, high nutrient-dense dish for your family or to take to a potluck. Watch this short video  where Dr. Michael Greger of NutritionFacts.org explains what scientific studies show to be the health benefits of the pecan in staving off cancer!  Measure and assemble the following ingredients: 4 C. Water 1 C. Pecan Halves (or pieces) 1 1/2 tsp. Salt 1 T. Chicken-style Seasoning (Optional) 1 T. Nutritional Yeast 1 T. Turmeric powder (Optional) 1 C. Chopped Onions 3 C. Rolled Oats Blend together: Water, Pecans, Salt, Chicken-Like Seasoning, Nutritional Yeast, Turmeric (no pecans?  Substitute walnut pieces). Recipe for Millet Margerine (Vegan) (Gluten-free)

STIR TOGETHER IN SAUCEPAN: *1 T. Agar Agar *1/2 C. cold water LET ABOVE STAND 5 MINUTES Cook until Agar Agar is dissolved and liquid is clear                            IN BLENDER: *1 C. packed cooked HOT Millet (cooked 1 C. Millet to 4C. Water 50 minutes with salt) *HALF of Agar Agar mixture *1 tsp. Salt *1/4 C. raw Cashews (cleaned) *1-2 cooked,peeled Carrots (for colour) WHIZ UP AT LOW SPEED, increasing speed to High until super smooth.  Blend in remaining Agar Agar mix at low speed.  Let stand a few minutes so air bubbles can escape.  Pour into containers and chill.  Keeps 1 week in fridge.

BEAVER TAILS recipe (egg-free, dairy-free)

Here is Wyona's VEGAN recipe (i.e., no eggs, no lard). At the bottom of the page you can find the traditional beaver tail recipe on Pinterest -- yummy as well, and a remembrance I have of Newfoundland! IN LARGE BOWL or MIXER: *1 C. Warm Water *1 tsp. Brown Sugar *2 tsp. Granular Yeast *1 tsp. Vanilla *1/4 C. Oil LET STAND while mixing dry ingredients: *2 C. Flour *1/2 tsp. Turmeric Powder *1/2 tsp. Salt *1/4 C. Sugar ADD above to the wet mixture and KNEAD until dough is soft and smooth. LET RISE until double in bulk. PINCH off golf-ball size pieces and roll out into think oval shapes. PLACE on well-greased cookie sheets, prick with fork and sprinkle with Cinnamon-Sugar mixture. BAKE at 350F on middle rack until golden.

RHUBARB CUSTARD PIE (egg-free, dairy-free)

                   Rhubarb-Custard Pie   PASTRY : *2 c. Flour *1/2 tsp. Salt WHISK TOGETHER: *1 C. Oil *1/2 C. Water MIX the above into the flour and press into pie plate. FILLING : BLEND 2 C. Water with *2 C. raw Almonds *4 T. Flour *1 C. Sugar *1 tsp. Carrot Pudding (egg-free, dairy-free)

    Steamed Carrot Pudding MIX all ingredients together: *1 C. Brown Sugar *1 C. Flour *1 C. Margarine (or Coconut Oil) *1 tsp. Non-aluminum Baking Powder *1 C. Raisins *1 C. Currants *1 C. shredded raw Potato *1 C. shredded raw Carrot *1/2 tsp. Salt *1 tsp. Cinnamon *1/4 tsp. Nutmeg *1/4 tsp. Cloves *1/4 tsp. Ginger STEAM for at least 3 hours in a double boiler-type pot or in wet cheese cloth bag hanging over steaming heat.   SERVE with Lemon Sauce. LEMON SAUCE: *1 c. Water *1/2 C. Sugar *1 tsp. Alpine "Cheese" Spread Recipe

Make your own vegan cheese squares with this easy, dairy-free recipe! Made with corn flour, agar agar, cashews, and zesty seasonings—perfect for snacking, platters, or melty comfort food! MIX 1 C. fine Corn Flour and 1 C. Water ADD 2 C. Boiling Water IN SEPARATE PAN put 1/3 C. AgarAgar powder-- Soak in 1/2 C. Warm Water ADD: 1/4 C. finely ground Cashews 1/4 C. fine Nutritional Yeast 1/4 tsp. Salt Pinch of Garlic Powder 1 T. Onion Powder 2 T. Lemon Juice WHIZ all ingredients in blender and pour into a mold to cut into squares when chilled. BBQ Tofu & Vegetables

Here is a lovely standby recipe for barbecue tofu and vegetables that uses familiar ingredients you likely already have in your kitchen. MARINADE:  1/4 C. Soy Sauce / Tamari 1/2  tsp. Chili Powder 1/2  tsp. Pepper 1     tsp. Mustard 2     blocks Firm Tofu, diced small (approx. 1/2- 3/4 inch pieces) SIMMER UNTIL TENDER: 1 C. Water 2 medium Carrots 2 stalks Celery 1 Green Bell Pepper, chopped coarse 1 Red Bell Pepper, chopped coarse 2 large Potatoes, diced IN ANOTHER POT, Steam: 4 Leaves & Stems Fresh Chard, chopped 1 C. Water ADD: Marinated Tofu to other Vegetables Steamed Chard (or other leafy greens) ADD: Barbecue Sauce of choice to taste Simmer all until tender.
