These crackers are crispy and tasty.  Vegan and gluten-free. They can be used as GF communion bread for those who have gluten restrictions. MIX following dry ingredients together: *3 C. Quick Oats *2 C. Brown Rice Flour *1 C. Potato Starch *1/4 C. Amaranth *1/2 C. Coconut flour OR finely cut coconut (not shreds)- either will work *1 tsp. Salt *1/2 C. Sesame Seeds In blender or with Whisk: *1 C. Water *2/3 C. Oil MIX into dry ingredients thoroughly and ROLL out on cookie sheet. CUT into squares- prick with a fork BAKE at 300F about 30 minutes until browning.

Coconut Carrot Cookies Recipe (Dairy-Free, Egg-Free)

MIX TOGETHER; 1 C. cooked, mashed Carrots 1/2 C. Sugar 1/2 C. Margerine 1/3 C. Oil 1 tsp. Vanilla 1/2 C. Salt DRY INGREDIENTS: MIX TOGETHER: 2 C. Whole Wheat Flour 1 C. shredded Coconut 2 tsp. non-aluminum Baking Powder ADD to Wet ingredients, mixing well, and drop by Tablespoonful on well-greased cookie sheets. BAKE at 375F on upper level rack for about 20 minutes

Company Baked Oatmeal: Breakfast Recipe

Baked Oatmeal: A delicious and healing breakfast!   No poured fats, dairy, eggs, margerine, or wheat! Preheat oven to 350 degrees F. Measure out ingredients: 2 C. rolled Oats 1/8 tsp. Coriander 1/6 tsp. Cardamon 1    tsp. Baking Powder (optional) 1/2 tsp. Sea Salt 1 Flax Egg (1 T. flax meal stirred into 2 1/2 T. warm water)  OR 3 1/2 T . Chia Gel 2 C. Almond Milk, unsweetened 1 C. Apple Sauce, unsweetened 1/4 C. Maple Syrup 1 tsp. Vanilla 1 large apple, peeled, and diced 1/2 C. Raisins 1/4 C. Coconut 3/4 C. chopped Walnuts or Hemp hearts (seeds) Zap the apple pieces for a minute or two in the microwave to soften them.  Set aside. Mix together oats, spices, baking powder and sea salt in a small dish.   In a larger bowl, combine the flax egg, almond milk, apple sauce, maple syrup and vanilla.  Add the dry ingredients to the wet ingredients and combine well. COMBINE IN THE SAUCEPAN: 1 C. Millet 4 C. Water 1 tsp. Salt Bring to boil.  Cover, reduce heat and simmer for 1 hour. Just before serving, stir in: 1/2 C. Unsweetened Coconut 1/2 C. Toasted Sunflower Seeds 3/4 C. chopped, pitted Dates Yield: 4 servings
