High Protein Chickpea-Tofu Cheesecake-- 3 Ways

                                         Maybe you have seen the delicious dark chocolate vegan cheesecake whose major ingredients are chickpeas and firm tofu? I got to thinking that, hey, other vegan cheesecakes could have this same unusual foundation and be just as yummy (and high protein, for those who are looking for additional protein in their vegan diet). 3 Recipes for Gluten-Free Sourdough Discard

3 yummy recipes made from gluten-free sourdough discard and 2 other gluten-free flours. Sourdough bread has a number of healthy attributes, as we likely all know from our experimentation during the Pandemic Pause.  This time around we are working with a gluten-free starter (1/4 cup of brown rice and 2 tablespoons of filtered water--tap water has chemicals that can slow down the starter).  I take out 1/2 of the starter each morning, and then feed it again. I also feed it in the evening before going to bed. Vegan Corn Meal Pancakes

1 c. whole wheat flour 2 T. corn starch 1/2 c. cornmeal 1/2 tsp. tsp. salt 1+ c. water 3 T. soy or garbanzo flour 1. Mix flour and meal on a cake pan and toast in oven at 350 degrees F. for 5-6 minutes to toast 2. Put all ingredients in blender for 1 minute. 3. Drop by spoonfuls on parchment-covered pan. 4. Bake about 15 minutes at 375 degrees  until golden. Turn broiler on for 1-2 mintes at end to brown tops. Mine baked up like little pita breads. They were a great accompaniment to the Nuteena-like spread/filling . 5.  Heap with fruit or conserves for breakfast, or as chapatis, with veggie stew.

The Alberni Vegetarian Supper Club

The Alberni Vegetarian Supper Club is a  culinary treat and then some.  Beginners or "old hands" at cooking are delighted with the international and local recipes.   Who attends?   People from different cultural backgrounds and all age groups.   What do they have in common?   They all want to make eating healthier a daily habit. The Sabbath Potluck (Fellowship Meal)

Quite often if you arrive unannounced at an Adventist Church-- anywhere, in my experience-- you will be invited to stay for the "fellowship meal" following the service.  For Christians from other denominations or non-Christians, there is often a sort of gasp-look when they realize that there is not only no "unclean" meats, but no "flesh foods" served.  This 'rule' is not universal (or not universally enforced..lol).  In the Philippines under a tent gazebo attached to the church we were served fish, a staple in this community.  Sometimes a member who is also a First Nation's  Elder brings smoked salmon as an offering to the fellowship meal.  The occasional time I have been invited to someone's home after Church and have been offered a chicken dish.  But in general you can expect a vegetarian (ovo-lacto) potluck-- or less frequently, a strictly vegan meal-- at the Sabbath Fellowship. Rice-Nut Burgers (Gluten-Free, Vegan)

Rice & Nut Burgers with Baby Bela mushrooms on top COOK the following until plump (about 40 min.): 2 C. Short-Grain Brown Rice in 4C. Water In food processor/blender: COARSE-CHOP: 2 C. Raw Nuts ADD the Rice & Nuts above in a Mixing Bowl with: 1 C. Brown Rice Flour ½ C. Tapioca Flour ½ C. Corn Flour Next, in a Blender WHIZ: ½ C. Water 1 Raw Potato 2 Onions 2 Cloves Garlic ½ C. GF Soy Sauce/Tamari 2 T. Caflib (Roasted Chicory) ½ C. Tomato Juice ADD contents of the Blender to the Rice-Nut Mixture and form into Patties. Place on a well-greased cookie sheet. Chicken-Style Seasoning Recipe (gluten-free, lactose-free)

This splendid chicken-style seasoning is a recipe in kindness, and yummy too. Please note that there are two recipes 1. MIX TOGETHER : 1 T. Cornstarch (or Potato Starch) 1 1/2 T. Onion Powder 1 tsp. Turmeric 1/2 tsp. Salt 1/2 tsp. Anise (or Coriander powder) 1/2 tsp. Parsley flakes 1/2 tsp. Garlic powder Store in a jar in a cool place. 2.
