Camp Stroganoff Recipe

  Camp Stroganoff is a delicious alternative to the commercially-  prepared camp foods, and much less expensive. In the past my husband went on two trail hikes of several days. He prepared for them by purchasing several packets of dehydrated food-- it was light to carry in his pack but was mostly quite unpalatable and pretty expensive for what he got. This particular recipe is made easily at home with the use of a dehydrator (sometimes ovens are set up to do this), parchment paper, ziplock baggies and the following ingredients: 2 tablespoons vegan butter (we use Earth Balance brand) OR 2 tablespoons olive oil 1 small onion, minced 1-3 garlic cloves, minced 1 pound mushrooms, chopped small 1/2 teaspoon each salt and pepper 2 tablespoons apple cider vinegar 3/4 cup vegetable broth 2 tablespoons all purpose wheat flour 1/2 cup vegan sour cream (commercial or homemade such as this recipe ) 8 ounces angel hair pasta The above recipe is for 2 adult servings of camp stroganoff. Fudgy Plant-based Carob-Peanut-Butter Muffin These fudgy peanut butter muffins are not only delicious but also healthier than you might guess. The carob-oat flour combo-- along with a cup of self-rising* all-purpose flour (see instructions below if you can't find self-raising flour)-- are fibre-full and nutritious. The peanut butter and soy milk amp up the protein content, and the carob chips sweetly bring it all together-- Yum! Mock Turkey Soup Here is another one of the Cooking School demo soups.  If you are feeling the lack of a turkey soup the day-after the festive occasion, this is fast and easy to throw together!  And tasty, of course.  And healthier than the real bird (see this video by Dr. Michael Greger about eating poultry) IN SOUP POT: 3 Qts. Water 1 C. slivered or chopped Celery 1/2 to 1 C. chopped Carrots 1/2 C. Onion Flakes 2 cubes Organic Herbal Bouillon or 4 T. Homemade Broth/Bouillion Other veggies , as desired, such as sliced mushroom, green peas, green beans, etc. BRING TO BOIL TURN DOWN HEAT TO SIMMER for 5 Minutes ADD: 2 C. diced Firm Organic Tofu 2 T.  Chicken-style Seasoning  (No MSG) Other seasoning and salt/pepper to your taste Approximately 4 C. cooked Pasta
