*1 C. Boiling Water
*1 C. Bran
BLEND TOGETHER:
*2 C. Soy or Rice Milk
*1/2 C. Oil
*1 T. Lemon Juice
*1 Apple, peeled, cored, and chopped
MIX TOGETHER:
*1 C. Sugar
*2 1/2 C. Flour
*1/2 tsp. Salt
*2 tsp. Non-Aluminum Baking Powder
MIX all ingredients together gently, do not beat.
SCOOP into well-greased muffin tins.
BAKE at 400F about 15 minutes.
