For the past while, I’ve been sharing simple, nourishing recipes online through Veggie School. Again and again, readers began asking the same question: “Do you have a cookbook?"

I hadn’t planned on writing one. But I kept thinking about the question, and about the many organizations working quietly and tirelessly to feed people in need. From local food banks to international relief programs, the need is constant, and the work depends on support.

That’s when it struck me: perhaps gathering my casserole recipes into a small, practical eBook could be one way to contribute. I prepared the recipe for Ukrainian Lazy Cabbage Roll Casserole and my friend and I enjoyed the textures and flavors. I recommend using green lentils rather than the orange lentils. I shredded the cabbage but next time will try cutting it. I look forward to making it again as I like the ingredients for a complete protein and lots of veggies. It is a versatile recipe and can be varied with the spices but more is better than less. I look forward to freezing into individual meals. Thank you. Mary

Hi we tried 3 dishes. Mexican 3 Sisters, Lazy Cabbage ( we added more salt and seasoning for our taste) and Chinese Tofu veggie. They were all really good. Even shared the tasty food with friends who enjoyed it too! Thanks for the recipies Cynthia. From.Anne and family
