Vegetable Burger Recipe + Veggie-Burger-Waffle (egg-free, dairy-free)







Here is a simple recipe for a yummy, healthy veggie burger, along with my adaptation for a delish savory waffle (scroll down to the bottom of this recipe). 

GRATE together:
*1 Zucchini
Home-made BBQ Sauce (Click)
*8 medium button mushrooms
*1 large Onion
*1 Carrot
*1 Potato

ADD:

*4 c. packed Whole Wheat Bread Crumbs
*1 T. Parsley
*1 tsp. Paprika
*1 tsp. granulated or minced Garlic
*1/2 tsp. Savory
*1/2 tsp. Oregano or Poultry Seasoning
*1 tsp. Salt
*1 T. Mrs. Dash Original or Cajun

MIX ALL THE ABOVE together and
LET STAND.

Mushrooms will release their moisture. If too wet to form burgers, ADD some cracker crumbs.
BAKE about 15 minutes at 450F or fry on griddle.

Savory Veggie Waffle


Recipe Adaptation for the Savory Veggie Waffle

INGREDIENTS:

*8 medium button mushrooms
*1 large Onion
*1 Carrot
*1 Potato
*1/2 to 1 cup of broth or carrot juice or celery juice, etc.
*2 c. rolled oats
*1 T. ground flax or chia seed OR 1 tsp. ground Psyllium seed (OPTIONAL)
*1 T. Parsley
*1 tsp. Paprika
*1 tsp. granulated or minced Garlic
*1/2 tsp. Savory
*1/2 tsp. Oregano or Poultry Seasoning
*1 tsp. Salt
*1 T. Mrs. Dash Original or Cajun
(Or any variation of spices you like in your savory burgers)

METHOD

  1. Chop veggies up into fairly small pieces and either steam or boil the onion, potato and carrot for a few minutes. (You could just blend them up raw but they might not blend well).
  2. Blend mushrooms, onion, potato, and carrot in a blender or a food processor.
  3. Let the veggie combination sit for a while to release the liquids.
  4. Mix the other items together and blend. Use the broth if needed for proper blending.
  5. If mixing the two lots in the blender looks like it might be too hard, just mis them together in a large bowl. 
  6. Will thicken with 'resting' but if it is too thick, add a little more fluid: broth or juice or plain water. Will be thicker than most waffle batter.
  7. Heat up a waffle maker to HOTTEST setting, and when ready, spoon and press on the mix. Not too thick (maybe 1/2")
  8. Close waffle maker and cook until steam stops. Resist the temptation to peak inside to see how it is doing before you know that it is done. 
  9. When done you may need to gently release the waffle around the edges with a silicone spatula, Be optimistic. Be brave (LOL)

  10. Add your favorite savory toppings. We used a scoop of hummus, sauerkraut and some cooked greens (bok choy) and red bell pepper. Just go for your faves: salad greens, beans, chili, veggie cheese, cashew or oat cheese sauce, pickles, avocado, salsa, tomato slices, onion slices, faux meat slices, soy curl bacon, etc. etc. etc. 


Makes about 6 good-size waffles.
