Mushroom-Walnut Burger Recipe (Egg-free, Dairy-free)


Definitely the Gourmet Burger in the Vegan Burger World:  Mushroom-Walnut Burger

Hi-- for years now, I have run the following recipe. Please see a bit of an update/alternate recipe (using a food processor instead of grating, and a couple of other subs that might make it easier or folks== the "updated" or alternative recipe follows this one:

IN FOOD PROCESSOR, COARSELY GRIND:
*1 C. raw Walnut Pieces
GRATE:
*5-6 Mushrooms of choice
*1 medium onion
*1 raw potato
MINCE:
*2 cloves GARLIC
COMBINE ALL ABOVE with:
*2 T. Soy Sauce
*1 T. Caflib (chicory coffee)
*4 C. fresh Bread Crumbs
LET STAND as the moisture in the grated Mushrooms will release into the bread crumbs in about 30 minutes
FORM into burgers
GRILL in Sunflower Seed or Grapeseed Oil for about 5 minutes per side
(Makes about a dozen bun-sized burgers)

Your favourite Burger Spices.  Here is a make-ahead recipe that has enough spices for several burger recipes:

Combine together in a glass jar with an airtight lid:
1 C. Nutritional Yeast
2 T. Sea Salt
2 T. Smoked Paprika
1 1/2 tsp. Garlic Salt
1 tsp. Basil Flakes
1/8 tsp. Thyme Flakes
1 tsp. Celery Seeds
1/2 tsp. Marjoram Powder
Blend together and store in fridge or cool pantry.

INGREDIENTS FOR Mushroom-Walnut Burger

1 C. raw walnuts
5-6 mushrooms, your choice
1 medium onion, peeled and cut into 1/6s
1 medium raw potato, peeled and cut into 1/6s

2 cloves Garlic, minced
2 T. Soy Sauce or Tamari
1 T. Burger Spice Mix (above) or your own favourite spices
4 C. fresh bread crumbs, small crumbs (about 4+ slices of bread)

METHOD:
1.  Process the walnuts until fine ground in the food processor
2.  Add in the mushrooms, onion and potato pieces and process until fine/combined
3. Add bread crumbs to bowl, and then add minced garlic, and all other ingredients above
4. Mix well and let sit so mushroom 'juice' can release into crumbs (about 30 minutes)
5. Form into patties and put each patty on a round of parchment paper that fits into your air fryer
6. Air fry each patty for 6 minutes at 350 degrees.

 NOTES:

No additional oil needed. The patty will lift easily off the parchment paper and stay together well.

Build a burger as usual, adding your fave additions.

Enjoy!  (Makes about 4 - 6 burgers depending on size/thickness)

These are Wyona's recipes and she tests them out before she passes them on... you'll enjoy this I'm sure-- I go to the local restaurant occasionally have their walnut burger... it can't touch this one!
