3 Recipes for Gluten-Free Sourdough Discard

3 yummy recipes made from gluten-free sourdough discard and 2 other gluten-free flours. Sourdough bread has a number of healthy attributes, as we likely all know from our experimentation during the Pandemic Pause.  This time around we are working with a gluten-free starter (1/4 cup of brown rice and 2 tablespoons of filtered water--tap water has chemicals that can slow down the starter).  I take out 1/2 of the starter each morning, and then feed it again. I also feed it in the evening before going to bed. Rooibus Latte- A Relaxing Hot Drink, Caffeine-Free

 


Rooibos (my ear hears it spoken as roy' bus) tea is a uniquely South African beverage made from the oxidized leaves of the Aspalathus linearis plant. This hardy shrub is indigenous to the Cederberg region, where it has been consumed for centuries. The distinct red-brown color and naturally sweet, slightly nutty flavor of rooibos results from extensive oxidation, similar to black tea. Rooibos is naturally caffeine-free, making it a popular relaxing choice.

Rooibos is prized for its health benefits. It is rich in antioxidants linked to reduced cardiovascular disease risk, better blood sugar regulation, and anti-inflammatory effects. Rooibos also provides minerals like iron, calcium, and magnesium. Its soothing nature makes it useful for digestive issues, immune support, and sleep promotion.

A sweet Adventist family from South Africa introduced rooibus tea to several years ago. I love how I can sort of Canadian-ize it by adding a little Maple Syrup to it in the following Latte version:

Creamy Vanilla Rooibos Latte

Ingredients:

1 cup water

1 tbsp rooibos tea leaves (or 1-2 tea bags)

1/2 cup almond or oat milk

1/2 tsp vanilla extract

1 tsp maple syrup (optional)

Method:

Bring water to a boil and add the rooibos tea leaves. Let it steep for 5-7 minutes.

Warm milk in a separate pot, and whisk in vanilla extract and maple syrup if using.

Strain the tea, combine it with the warm milk, and pour into a mug. This tea is antioxidant-rich and naturally caffeine-free.
