Bible Food - The Book of Galatians

For some strange reason, occasionally I get a whim to find out what people in the "Biblelands" would have eaten at the time of the writing of a particular piece.  Apart from the references to meat and dairy, much of what the people ate in those days, in that place, sounds like a good fit for a touring vegan.  Today we did a little dip into the Book of Galatians,  a letter (epistle) written by the apostle Paul to the Christian communities in Galatia.   Scholars date Galatians to around AD 48–55. If it was written earlier, it would be one of Paul's first letters, possibly before the Jerusalem Council (Acts 15, AD 49), which addressed the issue of Gentile converts following Jewish customs.   The main theme of the letter is justification by faith rather than adherence to the Mosaic Law. Paul strongly argues against the teaching that Gentile Christians must follow Jewish laws (like circumcision) to be saved. He defends his apostleship, emphasizes the role of grace, ...

3 Classic Thanksgiving Dessert Recipes

Try these 3 classic vegan Thanksgiving desserts! Pumpkin Pie: a creamy, spiced filling in a flaky crust. Apple Crisp: juicy apples baked with a warm oat topping. Pecan Pie Bars: rich, nutty bars with a buttery crust and maple pecan filling. These festive treats are a delicious way to finish your holiday meal!

1. Vegan Pumpkin Pie

 Ingredients:

- 1 (15 oz) can pumpkin puree

- 1 cup unsweetened almond milk

- 3/4 cup brown sugar

- 1/4 cup maple syrup

- 1 tsp ground cinnamon

- 1/2 tsp ground ginger

- 1/4 tsp ground nutmeg

- 1/4 tsp ground cloves

- 1/4 tsp salt

- 1 unbaked vegan pie crust

Method:

1. Preheat oven to 375°F. 

2. In a large bowl, whisk together the pumpkin puree, almond milk, brown sugar, maple syrup, cinnamon, ginger, nutmeg, cloves, and salt until well combined.

3. Pour the filling into the unbaked pie crust and smooth the top.

4. Bake for 55-60 minutes, until the center is almost set. 

5. Allow to cool completely before slicing and serving.

2. Vegan Apple Crisp

 Ingredients:

- 6 cups peeled, cored and sliced apples

- 1/2 cup brown sugar

- 1 tsp ground cinnamon

- 1/4 tsp ground nutmeg

For the topping:

- 1 cup rolled oats

- 1/2 cup all-purpose flour

- 1/2 cup light brown sugar

- 1/4 cup vegan butter, cold and cubed

- 1/2 tsp ground cinnamon

- 1/4 tsp salt

Method:

1. Preheat oven to 350°F. Grease an 8x8 inch baking dish.

2. In a large bowl, toss the apple slices with the brown sugar, cinnamon and nutmeg. Transfer to the prepared baking dish.

3. In a medium bowl, mix together the oats, flour, brown sugar, vegan butter, cinnamon and salt until crumbly. 

4. Sprinkle the oat topping evenly over the apples.

5. Bake for 35-40 minutes, until the apples are tender and the topping is golden brown.

6. Let cool for 10 minutes before serving.

3. Vegan Pecan Pie Bars

Ingredients:

For the crust:

- 1 1/2 cups all-purpose flour 

- 1/2 cup vegan butter, cold and cubed

- 1/4 cup brown sugar

- 1/4 tsp salt

For the pecan pie filling:

- 1 cup maple syrup

- 1/2 cup brown sugar

- 1/4 cup vegan butter, melted

- 1 tsp vanilla extract

- 1/4 tsp salt

- 2 cups pecan halves

Method:

1. Preheat oven to 350°F. Grease an 8x8 inch baking pan.

2. Make the crust: In a food processor, pulse the flour, vegan butter, brown sugar and salt until it resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan.

3. Bake the crust for 12-15 minutes until lightly golden.

4. Meanwhile, make the pecan pie filling: In a medium bowl, whisk together the maple syrup, brown sugar, melted vegan butter, vanilla and salt. Fold in the pecans.

5. Pour the pecan filling over the pre-baked crust and spread evenly.

6. Bake for 25-30 minutes, until the filling is set. 

7. Allow to cool completely before cutting into bars.
