3 Recipes for Gluten-Free Sourdough Discard

3 yummy recipes made from gluten-free sourdough discard and 2 other gluten-free flours. Sourdough bread has a number of healthy attributes, as we likely all know from our experimentation during the Pandemic Pause.  This time around we are working with a gluten-free starter (1/4 cup of brown rice and 2 tablespoons of filtered water--tap water has chemicals that can slow down the starter).  I take out 1/2 of the starter each morning, and then feed it again. I also feed it in the evening before going to bed. Brilliant Lentil-Tomato Soup. (Adobe Firefly)

1. Lentil-Tomato Soup

A hearty and protein-packed soup that’s perfect for a cozy meal.

Ingredients:

1. 1 cup red lentils

2. 1 can diced tomatoes

3. 3 cups vegetable broth

4. 1 small onion, chopped

5. 2 cloves garlic, minced

6. 1 tsp cumin

7. 1 tsp salt

Instructions:

1. Set Instant Pot to “Sauté” mode and cook the onion and garlic for 2 minutes

2. Add the remaining ingredients and stir.

3. Seal the lid and cook on high pressure for 10 minutes.

4. Allow natural release for 5 minutes, then quick release. Stir and serve.

Optional Additions: Carrots, spinach, coconut milk, lemon juice, or fresh herbs.

Exotic delicious Chickpea Curry (Adobe Firefly)

2. Chickpea Coconut Curry 

Creamy and full of flavor, this dish is a perfect comfort meal.

Ingredients:

1. 1 can chickpeas, drained

2. 1 can coconut milk

3. 1 small onion, chopped

4. 2 cloves garlic, minced

5. 1 tbsp curry powder

6. 1 tsp salt

7. 1 cup diced tomatoes

Instructions:

1. Use “Sauté” mode to cook the onion and garlic for 2 minutes.

2. Add all other ingredients, stirring well.

3. Cook on high pressure for 5 minutes, then quick release.

Optional Additions: Fresh ginger, bell peppers, spinach, lime juice, or chili flakes.

Hearty Sweet Potato-Black Bean Chili (Adobe Firefly)

A nutritious and filling chili that’s packed with plant-based protein.

Ingredients:

1. 1 medium sweet potato, diced

2. 1 can black beans, drained

3. 1 can diced tomatoes

4. 1 cup vegetable broth

5. 1 small onion, chopped

6. 1 tsp chili powder

7. 1/2 tsp cumin

Instructions:

1. Sauté the onion for 2 minutes.

2. Add remaining ingredients and stir well.

3. Cook on high pressure for 8 minutes, then natural release.

Optional Additions: Corn, avocado, jalapeño, lime juice, or cilantro.

Scrumptious Garlic Mushroom-Quinoa (Adobe Firefly)

4. Garlic Mushroom Quinoa

A simple yet delicious side or main dish with earthy flavors.

Ingredients:

1. 1 cup quinoa

2. 2 cups vegetable broth

3. 1 cup sliced mushrooms

4. 3 cloves garlic, minced

5. 1 tsp thyme

6. 1 tbsp olive oil

7. 1/2 tsp salt

Instructions:

Sauté garlic and mushrooms for 2 minutes.

1. Add quinoa, broth, thyme, and salt.

2. Seal lid and cook on high pressure for 1 minute. Let it natural release for 10 minutes.

Optional Additions: Green peas, spinach, sun-dried tomatoes, corn kernels, or nutritional yeast.

Perfect Maple Oats! (Adobe Firefly)

5. Maple Cinnamon Oatmeal

A warm and naturally sweet breakfast to start your day right.

Ingredients:

1. 1 cup rolled oats

2. 2 cups almond milk

3. 1 tbsp maple syrup

4. 1/2 tsp cinnamon

5. 1/4 tsp salt

6. 1/2 tsp vanilla extract

7. 1/4 cup chopped nuts (optional)

Instructions:

Add all ingredients to the Instant Pot and stir well.

1. Seal the lid and cook on high pressure for 3 minutes.

2. Allow natural release for 10 minutes, then stir and serve.

Optional Additions: Chia seeds, raisins, shredded coconut, or fresh fruit.

 6. Curried Cauliflower Rice

A quick and low-carb meal with bold curry flavors.

Ingredients:

1. 1 head cauliflower, riced

2. 1 can coconut milk

3. 1 tbsp curry powder

4. 1/2 tsp turmeric

5. 1/2 tsp salt

6. 1/4 tsp black pepper

7. 1 tbsp olive oil

Instructions:

1. Sauté cauliflower rice with oil for 2 minutes.

2. Add the remaining ingredients and stir.

3. Cook on high pressure for 1 minute, then quick release.

Optional Additions: Green peas, chickpeas, cilantro, or cashews.

Smoky and Savory Black Bean-Tomato Rice (Adobe Firefly)

7. Black Bean-Tomato Rice

A flavorful and filling dish with smoky and savory notes.

Ingredients:

1 cup rice

1 can black beans, drained

1 can diced tomatoes

2 cups vegetable broth

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

Instructions:

1. Add all ingredients to the Instant Pot and stir.

2. Seal the lid and cook on high pressure for 4 minutes.

3. Allow natural release for 10 minutes, then fluff with a fork and serve.

Optional Additions: Corn, bell peppers, avocado, lime juice, or fresh herbs.
